Using this pdf from the April Friend 2011 magazine walk through the week leading up to Easter.

Have a picture or object to represent each day for visual purposes. You could also stick them on the wall in order or lay in a line on the ground. Alternatively act out what is happening each day.
Saturday
An important holiday called Passover was only six days away. Many people were coming to Jerusalem so they could offer sacrifices in the temple on that day. Jesus walked to Bethany, a village near Jerusalem. He would stay there for five nights with His friends Lazarus, Mary, and Martha. Mary anointed His feet with oil.
Sunday
Jesus walked from Bethany to Jerusalem. He rode into the city on a donkey, as a verse in the Old Testament said He would. People recognized Him as their King, shouting, “Hosanna,” and laying down palm leaves in front of the donkey to keep dust from getting on the Savior. Jesus visited the temple and then returned to Bethany.

(you can re enact this with palm fronds or big leaves and have children say hosanna while fanning leaves placing leaves in front of a person being the donkey ~ my kids had a great time riding on my poor back!)
Monday
Jesus saw people buying and selling things in the temple. Because He wanted the temple to be a “house of prayer,” He made them leave. Then He healed people who were lame or blind. The jealous priests were angry with Him.
Tuesday
Jesus taught people in the temple and on a nearby hill called the Mount of Olives.
The priests plotted to kill Jesus. One of His disciples, Judas Iscariot, agreed to turn Jesus over to the priests in exchange for 30 silver coins.
Wednesday
The scriptures do not say what Jesus did on this day. He may have spent the day with His disciples. You could read the parable of the ten virgins, a story Jesus taught to His disciples to help them prepare for His Second Coming.
Thursday
Jesus’s disciples got ready for the Passover meal. During the meal, Jesus told the disciples that one of them would betray Him. Then, to help them remember Him, He gave them the sacrament for the first time. Jesus went to the Garden of Gethsemane to suffer for our sins and to pray to God. People came with swords and arrested Him. The disciples ran away in fear.

Jesus was taken to the high priest, Caiaphas. Jesus’s disciple Peter denied that he knew Him. Jesus was questioned by the governor, Pilate, and by the king, Herod. He was condemned to die on the cross. Jesus was crucified. A rich man named Joseph laid Jesus in his tomb. Jesus’s mother, Mary, and Mary Magdalene visited the tomb.

Go over to my Personal Blog and see how we made an Easter Countdown
Using Card cut in egg shape, paint, draw, decorate 7 eggs in any way you wish.
Either sew them together as link above, or just stick to wall or tie with ribbons.
On the back of the eggs write down some activities to do as a family.
Here are 7 examples of things you can do leading up to the week of Easter.
If you want a longer countdown calendar add other activities such as Egg hunts, dyeing eggs, bunny and chick crafts etc.
Palm Sunday :
Make a Palm Cross , reenact Jesus on a donkey and people waving palm fronds.Monday: (cleansing of the temple)
Talk about how church/temple should be a place of calm and worship and not a house of caos. Make Soft Pretzels (shaped like folded arms for prayer)
Tuesday: (teaching at the temple)
Jesus taught what is the greatest law. Love thy neighbour as they self. Take a gift for your neighbours
Wednesday:
Mary washed Jesus Feet and offered expensive oils/purfume. Reenact with children and wash their feet (I find this very humbling and moving)
Thursday: Preparing for Passover
Read the story of the passover John 13:1-11 and make a simple passover meal.Unleavened bread, lamb, horseradish, Haroset, Parsley and salt water details here
Friday: The day Jesus Died
Saturday: Festival of Light
Sunday: He is Risen

Lesson:
We created an Easter Tree using branches and painted them white. Over the next few weeks we will be adding things to it. This week I decided to make a modified version of a decoration we make for christmas.
Cut out pictures of Jesus from Old Ensigns, Friend or New Era magazines. I've also found really nice pictures in Deseret catalogues. If you don't have these print pictures found online.
Stick picture to card and on the other side add a scripture verse. Some of the following might be useful
For as in Adam all die, even so in Christ shall all be made alive (1 Corinthians 15:22)
I am the ressurrection and the life (John 11:25)
Why seek ye the living among the dead? He is not here, but is risen (Luke 24:3-6)
Be of good cheer; I have overcome the world (John 16:33)
Because I live, ye shall live also (John 14:19)
And now after the many testimonies which have been given of him,this is the testimony, last of all, which we give of him: That he lives!! For we saw him. (D&C 76:22-23)
Laminate (if you desire) add ribbon and hang on your easter reminder tree.

Lesson: Mom
And Jesus rose again after being Cruxified. This is the important message from Easter. Jesus was resurrected as we will also be one day. Jesus died for us and our sins so that we may live with him again.
When he appeared to the apostles they were afraid. But Jesus said Peace be unto you. He showed them his hands and feet.
They gave him a fish and some honeycomb and he did eat it before them (Luke 24:36-42)

Check out 12 days of Easter countdown (I know it's too late) but use day 12 idea for tonight - Have an empty egg demonstration for Christ being risen

Palm Sunday always falls on the Sunday before Easter Sunday. The feast commemorates (an event mentioned by all four Gospels Mark 11:1-11, Matthew 21:1-11, Luke 19:28-44, and John 12:12-19) the triumphant entry of Jesus into Jerusalem in the days before his Cruxifiction.
According to the Gospels, before entering Jerusalem, Jesus was staying at Bethany and Bethphage, and the Gospel of John adds that he had dinner with Lazarus, and his sisters Mary and Martha. While there, Jesus sent two disciples to the village over against them, in order to retrieve a donkey that had been tied up but never been ridden, and to say, if questioned, that the donkey was needed by the Lord but would be returned. Jesus then rode the donkey into Jerusalem. Jesus rode into Jerusalem, and the people there lay down their cloaks in front of him, and also lay down small branches of trees.

Lesson:
Have a paper easter egg hunt. I purchased a similar thing from a store, but you could easily make yourself. It had paper eggs, basket to put eggs in and arrow signs to point the directions to go.
On the back of the eggs I wrote about something that happened in the lead up to Easter Sunday. You can have the children collect the eggs in order, or you can put them in order once they have all been found around the house.
Just draw an easy picture or write a few words on the back of each egg about the following things:

Briefly talk about what happened the week leading up to Easter. Not too much, as I plan to use the other two mondays to go over some of the things in closer detail.

Resurrection Eggs

Each year my girls love to do resurrection eggs some time during easter. The FHE leading up to Easter is a good time to get them to start thinking about the real meaning of Easter.
This year I bought a proper set of eggs from our local christian bookstore (No LDS bookstores in Australia :( but in previous years I have always made my own from things around the house to be put into plastic eggs
Here is an example of things you can put in the 12 eggs. You could make as little or as few eggs as you desire. This list comes from Rainbow Castle.org
Allow children to choose eggs one at a time to open. Talk about what is inside. The Empty egg should be kept for last.
1. (Bread) Matthew 26:26
While they were eating Jesus took a piece of bread,
gave a prayer of thanks, broke it, and gave it to His disciples.
"Take and eat it," He said, "This is My body."
2. (Coins) Matthew 26: 14-15
Then one of the twelve disciples, named Judas Iscariot, went to
the chief priests and asked, "What will you give me if I betray
Jesus to you?" They counted out thirty silver coins and gave
them to him.
3. (Purple cloth, representing a purple robe) Mark 15:17
They put a purple robe on Jesus. . .
4. (Thorns) Matthew 27:29
Then they made a crown out of thorny branches and placed it on
His head, and put a stick on His right hand; then they knelt
before Him and made fun of Him. "Long live the King, of the
Jews!" they said.
5. (Scourge-a small piece of rope or thick string) Mark 15:15
Pilate wanted to please the crowd, so he set Barabbas free for
them. Then he had Jesus whipped and handed Him over to be
crucified.
6. (Cross) John 19: 17-18a
He went out, carrying His cross, and came to "The Place of the
Skull," as it is called. (In Hebrew it is called "Galgotha.") There
they crucified Him.
7. (Nails) John 20:25b
Thomas said to them, "Unless I see the scars of the nails in His
hands and put my finger on those scars and my hand in His
side, I will not believe."
8. (Sign) Luke 23:38
Above Him were written these words: THIS IS THE KING OF
THE JEWS.
9. (Sponge) Matthew 27:48
One of them ran up at once, took a sponge, soaked it in cheap
wine, put it on the end of a stick, and tried to make Him drink it.
10. (Spear) John 19:34
One of the soldiers plunged his spear into Jesus' side, and at
once blood and water poured out.
11. (Rock) Matthew 27:59-60
Joseph took the body, wrapped it in a new linen sheet, and
placed it in his own new tomb, which he had just recently dug
out of solid rock. Then he rolled a large stone across the
entrance to the tomb and went away.
12. (Empty) Matthew 28:6
He is not here He has risen just as He said.
